    6 large bananas

    5 teaspoons soft light brown sugar

    1/4 cup white rum or Kirsch

    Butter, for greasing

    TOPPING:
    1 tablespoon butter

    3/4 cup gingersnap cookie crumbs

    1-1/4 cups heavy cream

    Recipe



    1. Preheat the oven to 300 degrees F. Butter a 2-quart heatproof dish. (at least 2-inches deep)

    2. Cut bananas in half crosswise and arrange closely together in a single layer in the prepared dish. Sprinkle with the sugar and rum; bake for 15 minutes until heated through.

    3. Meanwhile, melt the butter for the topping in a heavy-bottomed saucepan, remove from heat and stir in the cookie crumbs. Reserve. Whip the cream until thickened, but runny enough to be poured easily.

    4. Remove the bananas from the oven and increase heat to 325 degrees F. Cool the bananas for 5 minutes, then pour the cream over, covering them completely. Sprinkle the crumb mixture evenly over the top.

    5. Bake for a further 25 minutes, until the topping is golden and bubbling and the bananas feel soft when pierced with a knife. Cool for about 1 minute then serve at once.
