    1 pound lean ground beef

    1 tablespoon vegetable oil

    3 onions, sliced

    1/4 cup all-purpose flour

    2 teaspoons dry mustard powder

    1 (16-ounce) can tomatoes, undrained

    2/3 cup beef broth

    Pepper to taste

    1/4 cup seedless raisins

    TOPPING:
    2 small packages plain potato chips

    1/2 cup shredded Cheddar cheese

    Recipe



    1. Heat the oil in a large skillet with a lid, add the onions and cook gently for 10 minutes, stirring occasionally, until browned. Add the beef and cook, stirring constantly with a wooden spoon to remove any lumps, for 5 to 10 minutes, until no longer pink. Remove from the heat.

    2. In a bowl, mix the flour and dry mustard to a smooth paste with a little of the tomato juice from the can. Stir in the tomatoes with the remaining juice and the beef broth.

    3. Add the tomato mixture to the pan and return to the heat. Bring to a boil, stirring constantly. Continue to cook for 1 to 2 minutes, stirring until the mixture thickens. Lower the heat and season to taste with pepper; stir in the raisins, cover and simmer for a further 20 minutes.

    4. Preheat the broiler to high. Spoon the ground beef mixture into a large shallow baking dish. Sprinkle the potato chips evenly over the surface, then sprinkle the shredded cheese on top. Broil for 2 to 3 minutes, until the cheese is melted and bubbling and the topping is golden brown. Serve at once, straight from the dish.
