    Pork, Island Supper

    List of Ingredients

    1 medium yellow onion, chopped
    2 tablespoons curry powder
    1 pork tenderloin (about 1 pound), cut into 1-inch-thick slices, trimmed
    1-1/2 cups reduced-sodium chicken broth
    1/2 can (14 ounces) low-fat coconut milk (Substitute skim milk, if desired)
    1/2 teaspoon salt
    1/2 teaspoon pepper
    1 cup white rice
    2 tbsp chopped fresh chives or 2 tsp dried

    Recipe

    Spray a large nonstick skillet with Pam. Heat over med-high heat. Add onion. Cook, stirring frequently, until softened. Add curry. Cook, stirring, for 1 minute. Add pork. Cook, turning once, until no longer pink, about 10 minutes. Add broth, coconut milk, salt and pepper. Bring to a boil. Reduce heat to medium. Simmer until sauce thickens, about 20 minutes.

    Meanwhile, prepare rice according to package directions, but omit salt.

    Spoon rice onto a serving platter. place pork over rice. Spoon sauce on top. Sprinkle with chives.
