    Meatloaf, Market Street

    List of Ingredients

    ï‚· 3/4 cup finely chopped onion
    ï‚· 3/4 cup finely chopped scallions
    ï‚· 1/4 cup finely chopped celery
    ï‚· 1/2 cup finely chopped carrot
    ï‚· 1/4 cup minced red bell pepper
    ï‚· 1/4 cup minced green bell pepper
    ï‚· 2 teaspoons minced garlic
    ï‚· 3 tablespoons butter
    ï‚· 3 eggs, beaten
    ï‚· 1 teaspoon ground cumin
    ï‚· 1/2 teaspoon nutmeg
    ï‚· 1/4 teaspoon cayenne
    ï‚· salt and freshly ground black pepper to taste
    ï‚· 1/2 cup catsup
    ï‚· 1/2 cup half-and-half
    ï‚· 2 pounds lean ground beef
    ï‚· 12 ounces bulk sausage
    ï‚· 3/4 cup fresh fine bread crumbs




    Recipe

    1. Sauté the onion, scallions, celery, carrot, bell peppers and garlic in the butter in a heavy skillet for 10 minutes or until the vegetables are tender and the moisture has evaporated. Cool to room temperature and chill for 1 hour.

    2. Mix the eggs, cumin, nutmeg, cayenne, salt and black pepper in a bowl and beat until smooth. Beat in the catsup and half-and-half. Add the ground beef, sausage, bread crumbs and chilled sautéed mixture. Mix well with hands for 5 minutes. Shape into a loaf.

    3. Place the meatloaf in a baking dish and place in a large baking pan. Add boiling water to reach halfway up the sides of the smaller dish. Bake at 375 degrees for 40 to 60 minutes or until cooked through.

    4. Remove the baking dish from the water and let stand for 20 minutes before serving. Serve with garlic mashed potato.
    Serves 8-10
