Meatloaf, African Style
List of Ingredients
2 medium onions, choppped
1 large firm apple, peeled and diced
2 tbsp margarine or bacon fat
2 tbsp dry sherry or sauterne
2 tsp curry powder
1 cup fine bread crumbs (made from toast)
1/2 cup milk
2 pounds ground lean beef
2 tsp salt
1/4 tsp pepper
2 dashes hot pepper sauce
2 eggs
2 tbsp apricot or pineapple preserves, or orange marmalade
1/2 cup salted peanuts, finely chopped
1/2 can (8-oz size) tomato sauce
Recipe
Saute onion and apple in the margarine in a small skillet until golden.
Remove from heat and stir in sherry and curry powder.
Put crumbs in a large bowl, add milk and mix well.
Stir in next 4 ingredients and curry mixture. Add remainng ingredients, except tomato sauce, and mix lightly but thoroughly.
Put in 9"x5"x3" loaf pan and bake in preheated 350 degree oven 45 minutes.
Remove from oven and drizzle tomato sauce over top. Bake 15 minutes longer.
Let stand in pan 15 minutes before turning out on a platter.
This is good with rice, mango chutney, and fresh fruits such as bananas, pineapple spears and apple slices.
