    1 pound pork tenderloin or pork loin, trimmed and cut into 1-inch cubes

    2 medium red bell peppers, cut into 1-inch strips (about 2 cups)

    1 (15-ounce) can baby corn, drained

    1 cup fresh snow peas, trimmed and cut into thin strips (Make small stacks and slice lengthwise.)

    MARINADE:
    1/2 cup low-sodium soy sauce

    4 green onions, finely chopped

    1 clove garlic, minced

    2 teaspoons sugar

    1 teaspoon minced fresh ginger or 1/4 teaspoon ground

    Cooked rice

    1. To prepare marinade, in a shallow glass dish, combine the marinade ingredients. Reserve 2 tablespoons. Add pork to remaining marinade, turning to coat. Cover and refrigerate for 15 minutes.

    2. In a large skillet or wok, over high heat, cook pork with marinade, stirring frequently, until cooked through and no longer pink, about 7 minutes. Place pork on a plate; cover with foil and keep warm.

    3. Add peppers and corn and reserved marinade to skillet Cook over low heat, stirring constantly, until crisp-tender, about 3 minutes. Add snow peas and cook, stirring constantly for 1 minute. Return pork to skillet; cook until heated through, about 1 minute. Serve immediately with rice.
