    3 pounds pork spareribs

    MARINADE:
    1/2 cup reduced-sodium ketchup

    1/4 cup red-wine vinegar or cider vinegar

    2 tablespoons honey

    1 tablespoon reduced-sodium soy sauce

    1 cloves garlic, minced

    1 tablespoon fresh thyme or 1 teaspoon dried thyme

    1/8 teaspoon cayenne pepper (optional)

    Recipe



    1. In a large Dutch oven, combine ribs and cold water to cover. Bring to a boil over high heat. Reduce heat to low; simmer for 10 minutes. Drain well.

    2. While ribs are simmering, prepare the marinade. In a large shallow glass or ceramic dish, combine the ketchup, vinegar, honey, soy sauce, garlic, thyme and cayenne pepper. Mix well. Place ribs in the marinade, turning to coat. Cover the dish with plastic wrap; refrigerate for at least 4 hours or overnight.

    3. Preheat oven to 350° F. Place ribs on a rack in a large roasting pan and cook, basting frequently with pan juices, until browned and tender, about 40 minutes.
