2 cups Granny Smith apples, peeled, cored and diced
1 cup chopped pecans
1 tablespoon unsalted butter, chilled, cut into small pieces
1 sheet frozen puff pastry, thawed
1 tablespoon confectioner's sugar
Recipe
1. Preheat oven to 375 degrees F.
2. Combine first 4 ingredients in a bowl and mix thoroughly. Add next 3 ingredients and toss to coat.
3. Unfold pastry on a lightly floured surface. Roll into a 15 x 10-inch rectangle. Brush lightly with water. Spoon apple mixture over pastry to within 2 inches of long sides and all the way to short sides. Roll up jelly roll fashion. Cut into 1-1/4 inch slices. Arrange 2 inches apart on a greased baking sheet.
4. Bake 15 minutes on middle rack of oven, or until golden. Remove and cool on wire rack. Sprinkle with confectioner's sugar.
