Rosemary Pastry Strips
List of Ingredients
1-1/2 cups cake flour
1-1/4 tsp. baking powder
1/4 teaspoon salt
2 tablespoons sugar
1 tablespoon finely minced fresh rosemary
3 tablespoons butter
2 large eggs, lightly beaten
Vegetable oil for deep-frying
1 cup confectioners' sugar
Recipe
1. In a medium mixing bowl, sift together the flour, baking powder, salt, sugar and rosemary. Cut in the butter. Whisk in the eggs.
2. Knead the dough on a lightly floured surface until smooth and elastic. Cover with a damp cloth and let rest 1 hour.
3. Divide the dough into quarters and roll each piece of dough out to make an 8 by 10-inch rectangle, 1/8-inch thick. Cut each rectangle into strips 3/4-inch wide and 8-inches long.
4. In a deep skillet, preheat the oil to 350 degrees F. Fry the strips in batches of 4 until light golden brown, about 2 minutes.
5. Drain, dust generously with confectioners' sugar, and serve at once.
Makes 36 pastry strips.
