5 quarter-size slices (1/4 inch thick) fresh ginger, unpeeled
2 cloves garlic
4 scallions
3 tablespoons honey
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
8 chicken drumsticks (about 2-1/2 pounds total)
Recipe
1. Grate the orange and lime zests. Juice the orange (about 1/2 cup) and lime (about 2 tablespoons). Note: Place in microwave at 100% for 45 seconds to make juicing easier.
2. Mince the ginger and garlic in a food processor. Add the scallions and finely chop. Combine the zests, the ginger-garlic mixture and the remaining ingredients except for the drumsticks in a plastic bag set in a bowl. Add the drumsticks and let marinate at least 30 minutes, moving the drumsticks around once in a while to be sure they are well covered with marinade.
3. Preheat the broiler and line a broiler pan with foil. Arrange the drumsticks on the broiler pan, reserving marinade. Broil 4 inches from heat for 8 minutes.
4. Meanwhile, Pour the marinade into a small saucepan and bring to boil over medium-high heat. Reduce to low, cover and simmer, stirring occasionally while drumsticks cook.
5. Turn the drumsticks over, brush with some of the marinade. Broil until cooked through, about 8 minutes. Bring any remaining marinade to a boil again and serve hot with the drumsticks.
