Stuffed Turkey Rolls in Orange Sauce
List of Ingredients
2 medium onions
4 cloves garlic
½ cup packed parsley sprigs (optional)
1 teaspoon thyme
1 teaspoon salt
½ teaspoon pepper
8 turkey cutlets (about 2 pounds total)
Half a 10-ounce package frozen green beans, thawed
¼ cup olive or other vegetable oil
1 cup chicken broth
2 tablespoons cornstarch
½ cup orange juice
2 tablespoons tomato paste
3 tablespoons grated orange zest (optional)
Recipe
1. In a food processor, mince the onions, garlic and parsley. Measure out 1/3 cup of the mixture and in a small bowl, combine it with the thyme, salt and pepper.
2. Dividing evenly, spread the onion-thyme mixture over each turkey cutlet.
3. Place 4 to 6 green beans down the center of each cutlet. Roll the turkey around the beans and secure it with toothpicks.
4. In a large skillet, warm 2 tablespoons of the oil over medium-high heat until hot but not smoking. Add the remaining onion-garlic mixture and sauté until the mixture is softened, about 1 minute.
5. Add the turkey rolls and brown them all over, adding up to 2 tablespoons more oil if necessary.
6. In a medium bowl, combine the broth and cornstarch. Stir in the orange juice, tomato paste and orange zest. Add the mixture to the skillet, bring the liquid to a boil, reduce the heat to medium-low, cover and simmer for 5 minutes, stirring occasionally.
7. Turn the turkey rolls over, re-cover and simmer for 3 minutes longer, or until the turkey is cooked through.
8. Remove the toothpicks. Cut the turkey rolls into slices. Spoon some of the sauce onto each dinner plate and arrange the sliced turkey rolls on top.
