Tuscan Chicken
List of Ingredients
- 2 whole chicken breasts, skinned and boned
- 1/2 stick margarine
- 2 tbsp brandy
- 2 medium tomatoes, cut in wedges
- 1/2 lb sliced mushrooms
- 1 cup dry white wine
- 1/2 tsp salt
- 1/4 tsp pepper
- 3 tbsp chopped parsley
Instructions
- Cut chicken into 3/4 inch cubes; cook in butter until firm and white (4 minutes).
- Add brandy, tomato and mushrooms to skillet. Cook and stir for 3 minutes.
- Add wine. Increase heat and cook a few minutes to reduce sauce. Stir in salt and pepper. Spirinkle with parsley.
