    Tuscan Chicken


    List of Ingredients


    • 2 whole chicken breasts, skinned and boned
    • 1/2 stick margarine
    • 2 tbsp brandy
    • 2 medium tomatoes, cut in wedges
    • 1/2 lb sliced mushrooms
    • 1 cup dry white wine
    • 1/2 tsp salt
    • 1/4 tsp pepper
    • 3 tbsp chopped parsley


    Instructions


    1. Cut chicken into 3/4 inch cubes; cook in butter until firm and white (4 minutes).
    2. Add brandy, tomato and mushrooms to skillet. Cook and stir for 3 minutes.
    3. Add wine. Increase heat and cook a few minutes to reduce sauce. Stir in salt and pepper. Spirinkle with parsley.
