10 ounces spinach, frozen, defrosted and well drained
1 cup rice, cooked
4 eggs, beaten
2 cups Monterey jack cheese, grated
1 small onion, diced
2 tablespoons butter
1 cup milk
1/2 teaspoon rosemary
1/2 teaspoon marjoram
Salt and pepper to taste
Recipe
1. Saute the onion in the butter until soft. Mix with all ingredients. Add to a lightly oiled 2-quart casserole dish.
2. Bake at 350 for 25 to 35 minutes (or until set). Serve warm.
