1 grapefruit, zest and pith cut away and the flesh cut into sections
1 tablespoon of juice reserved
1 firm-ripe avocado (preferably California), pitted, peeled and sliced lengthwise
4 soft-leaved lettuce leaves such as Boston or Bibb, rinsed and spun dry
DRESSING:
1 tablespoon white-wine vinegar
1 teaspoon honey
Generous pinch of cayenne pepper, or to taste
2 tablespoons vegetable oil
1 tablespoon reserved grapefruit juice
Salt to taste
Recipe
1. To make the dressing, in a small bowl, whisk together the vinegar, honey, cayenne pepper, oil, reserved grapefruit juice and salt.
2. Arrange 2 of the lettuce leaves on each of 2 individual serving plates. Arrange the grapefruit sections on the plates alternately with the avocado slices. Drizzle the salads with the dressing.
