Corn Salad
This came from Family Circle or Women's Day about 30 years ago. It's a great dish to take to a party or covered dish supper.
List of Ingredients
- 3 cans (10.5 oz ea) whole kernel corn, drained
- 2 cans (15 1/4 oz ea) red kidney beans, drained
- 1 large red pepper & 1 large green pepper, chopped
- 1 cup sliced celery
- 1/2 cup chopped green onion
- 2 cloves garlic, crushed
- 2 tbsp lemon juice
- 2 tbsp red wine vinegar
- 1 tsp mustard
- 1/2 tsp salt
- 1/2 tsp leaf basil, crumbled
- 1/4 tsp pepper
- 1-1/3 cups olive oil
Instructions
- Combine corn, beans,red and green peppers, celery and green onion in a large salad bowl; toss lightly.
- Combine garlic, lemon juice, vinegar, dry mustard, salt, basil, pepper, and oil in a screw-top jar; shake well. Pour over vegetables; toss lightly. Chill until serving time.
