1 can black beans, drained
1 can corn, drained
1 can chickpeas, drained
1 medium onion, chopped (Vidalias are great!)
1 red sweet pepper, chopped
1 green bell pepper, chopped
1 medium to large tomato, chopped
DRESSING:
1/4 to 1/2 cup red wine vinegar
1/4 to1/2 cup vegetable or olive oil
1 tbsp. sugar
Recipe
Mix the beans and vegetables together in a large bowl. In a separate bowl, mix the dressing ingredients. (Bottled red wine vinaigrette may be used instead.) Pour dressing over mixture and stir thoroughly. Let marinate in refrigerator for at least 1 hour before serving.
