Mandarin Chicken Salad
List of Ingredients
1 cup nonfat plain yogurt
2 tbsp fat-free honey-mustard salad dressing
1/4 tsp grated orange peel
2 cups shredded cooked chicken
2 medium carrots, grated (about 2 cups)
2 medium stalks celery, diced (about 2 cups)
2 medium Red Delicious apples, chopped (about 2 cups)
1 can (7 oz) mandarin orange segments, drained
1/2 tsp freshly ground black pepper
1 cup unsalted dry-roasted peanuts (optional)
6 large Boston lettuce leaves
Recipe
In a large bowl, combine yogurt, honey-mustard salad dressing, and orange peel. Mix well.
Add chicken, carrots, celery, apples, mandarin orange segments and pepper. Mix well.
Cover bowl with plastic wrap and chill 30 minutes. Stir in peanuts. Arrange lettuce leaves on a serving plate. Spoon chicken salad on top. Serve immediately.
