    Mozzarella and Tomato Salad

    List of Ingredients




    4 medium ripe tomatoes, sliced
    1 package (16 oz) nonfat mozzarella cheese, thinly sliced
    Herbed garlic croutons (optional)
    Fresh basil leaves for garnish (optional)
    DRESSING:
    1/2 cup crushed tomatoes
    2 tbsp balsamic vinegar or red-wine vinegar
    1 tsp dried basil
    1 tsp dried thyme
    1/2 tsp Dijon mustard
    1/4 tsp freshly ground black pepper

    Recipe



    To prepare dressing, in a small bowl, combine the dressing ingredients. Mix well.
    Arrange tomato slices and mozzarella slices evenly on individual serving plates. Spoon dressing on top. Add croutons and garnish with fresh basil if desired.
