    Tomato Aspic

    List of Ingredients

    ASPIC:
    1 package (4 ounces) Lemon Jell-O
    1 cup boiling water
    1 can {10-3/4 ounces) condensed tomato soup
    2 tablespoons lemon juice
    1 cup chopped celery
    3 tablespoons chopped onion

    FILLING:
    2 cups cottage cheese
    1/4 cup mayonnaise
    1/4 cup chopped green onion
    1/4 cup chopped green bell pepper

    Recipe

    ASPIC:
    1. Dissolve Jell-O in boiling water; add soup and lemon juice. Stir until well blended. Chill until slightly thick, but not set; add celery and onion.

    2. Pour into a 1-quart bundt cake pan. Chill until firm, about 12 hours. Unmold on salad greens.

    FILLING:
    1. Mix well in a medium size bowl, cottage cheese, mayonnaise, chopped green onion and chopped bell pepper.

    2. Chill at least 12 hours.

    TO SERVE:
    Unmold aspic on salad greens and fill center hole with cottage cheese mixture. If there is any cottage cheese mixture left over, place around sides of mold. Serve chilled.

    Serves 6
