    10 medium Granny Smith apples, pared, cored and coarsely chopped

    2 (2-1/2 inch) cinnamon Sticks

    1 cup apple juice

    1 teaspoon grated lemon zest

    1/3 cup packed brown sugar

    1-1/2 tablespoons fresh ginger root, grated

    1/4 teaspoon grated nutmeg

    Recipe



    1. Place apples, cinnamon, apple juice and lemon zest in a large saucepan or Dutch oven. Simmer covered, stirring occasionally, over medium low heat until apples are soft, 20 to 25 minutes.

    2. Stir in sugar to taste, the ginger and the nutmeg. Cook until sugar is dissolved and sauce thickens, about 5 minutes.

    3. Serve warm or cold. Remove cinnamon sticks just before serving.

    Makes about 6 cups, 92 calories per 1/2 cup.
