    Stew, Bay Scallop

    List of Ingredients

    2 tablespoons chopped shallot
    2 tablespoons butter
    1 cup dry white wine
    1 cup heavy cream
    2 cup whole milk (not skim or 2 per-cent)
    3 tablespoons snipped chives
    1 pound scallops (OR 1/2 pound scallops and 1/2 pound lobster meat)
    1 teaspoon white pepper (or to taste)
    Salt to taste

    Recipe

    1. Pan saute shallots in butter, add wine; boil. Lower heat and simmer 2 minutes.

    2. Add scallops, simmer 5 minutes. Add milk, cream and chives. Stir until hot. Do not boil. Add salt and white pepper.

    Serves 4
