    Chilled Tomato-Basil Soup

    List of Ingredients




    3 cups tomatoes (fresh or canned), peeled, seeded, and diced

    1/4 cup fresh basil, chopped

    1-1/2 cups tomato juice

    3 tablespoons red wine vinegar

    1-1/2 tablespoons olive oil

    1 teaspoon garlic, minced

    Salt and pepper to taste


    Recipe



    1. Chop the diced tomatoes until minced.

    2. Add all ingredients to a large glass bowl. Mix well. Check the seasonings.

    3. Cover and chill at least 2 hours. Serve cold.

    Serves 4-6
