Cold Cucumber and Spinach Soup
Recipe Introduction
This has been in my file for years. I don't know where it came from, but it's delicious.
List of Ingredients
- 1 bunch scallions, sliced
- 2 tablespoons butter
- 4 cups diced cucumbers
- 3 cups chicken broth
- 1 cup chopped spinach
- 1/2 cup sliced, peeled potatoes
- 1/2 teaspoon salt
- Lemon juice and pepper to taste
- 1 cup light cream
- Thin slices of cucumber, radishes and/or scallions for garnish
Instructions
- Saute the scallions in the butter in a saucepan until softened.
- Add the cucmbers, broth, spinach, potatoes, salt lemon juice and pepper and simmer until potatoes are tender.
- Transfer the mixture to a blender in batches and puree.Transfer the puree to a bowl and stir in light cream.
- Let the mixture cool and chill it for several hours.
Final Comments
Serve in chilled bowls and garnish with thin slices of radishes, cucumber, and/or scallions.
