    List of Ingredients




    2 large onions, thinly sliced and quartered (about 1-3/4 pounds)

    1/4 cup butter or margarine, melted

    3 tablespoons all-purpose flour

    4 cups chicken broth

    1 cup half-and-half

    1 cup (4 ounces) shredded Cheddar cheese

    1 tablespoon diced green pepper

    1/4 teaspoon white pepper

    Recipe



    1. Sauté onion in butter in a Dutch oven until tender; add flour, stirring until smooth. Cook 1 minute, stirring constantly.

    2. Gradually add chicken broth; simmer, uncovered, 30 minutes, stirring often. Add half-and-half and remaining ingredients; cook until cheese melts and soup is heated.

    Yields 7 cups
