Sauté onion in butter in a Dutch oven until tender; add flour, stirring until smooth. Cook 1 minute, stirring constantly. 2. Gradually add chicken broth; simmer, uncovered, 30 minutes, stirring often. Add half-and-half and remaining ingredients; cook until cheese melts and soup is heated. Yields 7 cups
