    Stew, Hearty Vegetable

    List of Ingredients

    32 ounces tomato juice
    14-1/2 ounce can tomatoes, pureed
    2 cups water
    2 large potatoes, chopped
    15 ounce can garbanzo beans, drained
    15 ounce can kidney beans, drained
    1 cup lentils, rinsed and drained
    1 large onion, chopped
    2 teaspoons garlic powder
    1 cup red bell pepper, diced
    1 cup green bell pepper, diced
    10-ounce box frozen chopped broccoli
    2 large carrots, grated
    2 tablespoons dried parsley
    2 tablespoons chili powder
    1 teaspoon dried basil
    1 teaspoon ground cumin



    Recipe

    Combine everything. After bringing to a boil, reduce heat & simmer, covered, 30 to 45 minutes or until lentils are tender.

    Serves 12
