Sausage-Cabbage Soup

3/4 pound white cabbage, finely shredded
1/2 pound Vienna sausages
1 tablespoon butter or margarine
1 onion, chopped
1/2 pound potatoes, peeled and diced
4 cups chicken broth
1 bay leaf
Salt and pepper
Pinch of ground nutmeg
3 tablespoons cream
1 tablespoon fresh chopped parsley, to garnish
Recipe
1. Melt the butter in a large saucepan. Add the cabbage, onion and the potatoes and cook gently, stirring, for about 3 minutes.
2. Add the broth, bay leaf and salt, pepper and nutmeg to taste. Bring to boil, then reduce heat, cover saucepan and simmer for 30 minutes.
3. Meanwhile, preheat the broiler to medium and cook the sausages for 15 minutes, turning frequently.
4. Remove the soup from the heat and discard the bay leaf. Cool for a few minutes, then liquidize in a blender. Return to a clean saucepan and add the sausages and cream. Heat gently for 5 minutes and adjust seasoning if necessary. Spoon into warm bowls and sprinkle with chopped parsley.
