    Asparagus Soup

    List of Ingredients

    2 pounds asparagus, cut diagonally into 1-inch pieces
    1 clove garlic, pressed
    3 leeks, sliced
    4 scallions, sliced thinly
    3 tablespoons butter
    1 small red potato, chopped
    4 cups water
    1 vegetable, beef, or chicken bouillon cube
    1 tablespoon soy sauce
    1 cup cream
    2 tablespoons fresh tarragon, chopped (or 2 teaspoons dried)
    2 tablespoons fresh basil leaves, chopped (or 2 teaspoons dried)

    Recipe

    1. Sauté vegetables in butter for 5 minutes.

    2. Add water and bouillon cube; simmer 5 minutes.

    3. Add remaining ingredients and simmer 10 minutes more.
