    Stew, Frankfurter Stew

    List of Ingredients

    1 pound frankfurters, sliced

    3 tablespoons oil

    3 onions, chopped

    1 clove garlic, minced

    2 green peppers, seeded and sliced

    1 red pepper, seeded and sliced

    1 (16-ounce) can tomatoes, undrained

    1/4 teaspoon cayenne pepper

    1-1/2 tablespoons paprika

    Salt and pepper to taste

    Recipe

    1. Heat the oil in a large skillet and cook the onions and garlic for 8 to 10 minutes, until softened and light brown.

    2. Cook the green and red peppers for a further 5 minutes, stirring them constantly. Add the tomatoes with their juice, cayenne and paprika. Season to taste. Cover and simmer for 25 minutes, stirring occasionally with a wooden spoon to break up the tomatoes.

    3. Add the frankfurter slices and simmer, covered , for a further 10 minutes, until heated through. Transfer to a warmed serving dish and serve at once.

    Serves 4
