    Stew, Yankee Beef and Apple

    List of Ingredients

    1 pound beef top round, cut into 1 inch cubes
    2 tablespoons vegetable oil
    1 medium onion sliced
    2 tablespoons all-purpose flour
    2 tart apples, peeled, cored and sliced (I prefer Granny Smith)
    1 (13-1/2 ounce) can of beef broth
    1/2 teaspoon ground sage
    1 medium potato, peeled & cubed
    1 cup frozen peas & carrots, thawed


    Recipe

    In a large saucepan, over medium-high heat, brown beef in oil.

    Stir in flour, apple slices, broth and sage. Heat to a boil, reduce heat, cover, simmer for 1-1/2 hours or until meat is tender.

    Add potato; simmer 20 minutes. Stir in peas and carrots; simmer until heated through.

    Serves 4
