    1/2 pound green beans, trimmed and blanched

    1 tablespoon olive oil

    1 teaspoon garlic, minced

    1/3 cup canned roasted red peppers, diced

    Salt and freshly ground pepper to taste


    Recipe



    1. Heat the oil in a skillet. Add the beans and cook until just soft.

    2. Add the garlic and peppers. Cook for 2 minutes longer. Check the seasonings. Serve warm.

    Serves 3 to 4
