Beets in Horseradish Sauce

4 cooked beets (about 1-1/2 pounds, total), peeled and sliced under running water
2 tablespoons butter or margarine
1 bay leaf
1 onion, finely chopped
1/4 cup all-purpose flour
1/14 cups milk
1-1/2 tablespoons grated fresh horseradish, bottled horseradish or horseradish sauce
Salt and pepper to taste
Recipe
1. Preheat the oven to 350 degrees F. Arrange the beet slices in a shallow baking dish.
2. Melt the butter in a saucepan, add the bay leaf and onion and cook gently for 5 minutes, until the onion is soft and translucent. Sprinkle in the flour and stir over low heat for 2 minutes, until straw-colored. Remove from heat and gradually stir in milk. Return to the heat and simmer, stirring, until thick and smooth. Add the horseradish and season with salt and pepper to taste.
3. Remove the sauce from the heat and discard the bay leaf. Work the sauce in a blender until smooth, then pour over the beets. Cover with a lid or aluminum foil and bake in the oven for 20 minutes, until the beets are heated through. Serve hot, straight from the dish.
