    1-1/2 pounds Brussels sprouts

    Salt

    1 tablespoon vegetable oil

    1 large onion, sliced

    1 green pepper, seeded and chopped

    1 pound tomatoes

    1/2 teaspoon dried basil

    Pepper

    Recipe



    1. Trim the sprouts. Wash them thoroughly and cut a cross in the base of each. Cook them in boiling salted water until just tender, about 10 to 12 minutes. Drain well.

    2. Meanwhile, heat the oil in a skillet over medium heat. Cook the onion and green pepper until the pepper is soft and the onion is brown.

    3. Cover the tomatoes with boiling water and leave for 1 minute, then plunge into cold water. Remove with a fork and use a sharp knife to take away the skin. Roughly chop the skinned tomatoes.

    4. Add the sprouts, tomatoes and basil to the pan and heat through. Season well with black pepper and serve immediately.
