    Cauliflower with Mustard Gratin

    List of Ingredients




     1 large cauliflower
     1/2 cup mayonnaise
     1/4 cup commercial hot Chinese mustard
     1/2 cup (2 ounces) shredded Swiss cheese
     2 tablespoons fine, dry bread crumbs
     Chopped fresh parsley for garnish

    Recipe



    1. Remove outer leaves and stalk, leaving cauliflower head whole. Place in boiling water to cover; cover and cook 10 to 15 minutes until tender. Drain and place in a 9-inch square pan.

    2. Combine mayonnaise and mustard; spread over cauliflower.

    3. Combine cheese and breadcrumbs; sprinkle over mustard mixture.

    4. Broil 5-1/2 inches from heat (with electric oven door partially opened) 3 minutes.

    5. Serve with sauteed cherry tomatoes and sprinkle with parsley, if desired.
