    List of Ingredients




    1 eggplant

    1/2 cup water

    1/4 cup butter

    1/2 cup bread crumbs

    1/2 teaspoon salt

    1/8 teaspoon pepper

    1/2 tablespoon chopped onion

    2 eggs, well beaten

    Recipe



    1. Peel and chop eggplant. Cook in water till tender. Drain.

    2. Add melted butter, soft bread crumbs, eggs, and seasoning.

    3. Pour in buttered casserole dish, sprinkle with buttered bread crumbs. Bake at 350 degrees F. for 30 to 40 minutes until crumbs are browned.

    NOTE: May use crackers or stuffing mix instead of bread crumbs.
