Cut eggplant into 3/4-inch slices. 2. Combine dressing, lemon juice and garlic. Brush eggplant slices on both sides. Sprinkle with salt, pepper and herbs. 3. Broil 4 inches from heat for 5 minutes. Brush with dressing mixture; turn and broil 5 additional minutes. 4. Brush with dressing and sprinkle with parmesan. Serves 4 to 6
