    List of Ingredients




    1 large eggplant, unpeeled (1-1/2 pounds)

    1/4 cup oil and vinegar dressing

    2 tablespoons fresh lemon juice

    2 cloves garlic, crushed

    1/4 teaspoon salt

    1/2 teaspoon pepper

    1 teaspoon thyme

    1 teaspoon rosemary

    2 tablespoons Parmesan cheese

    Recipe



    1. Cut eggplant into 3/4-inch slices.

    2. Combine dressing, lemon juice and garlic. Brush eggplant slices on both sides. Sprinkle with salt, pepper and herbs.

    3. Broil 4 inches from heat for 5 minutes. Brush with dressing mixture; turn and broil 5 additional minutes.

    4. Brush with dressing and sprinkle with parmesan.

    Serves 4 to 6
