    Carrots, Honey-Glazed

    Recipe Introduction


    From "Healthy Meals in Minutes", 1995. This is a colorful complement to roast beef.


    List of Ingredients


    • 2 cups sliced carrots
    • 1 lemon peel strip (2x1/2 inch)
    • 1-1/2 tbsp honey
    • 1/8 tsp salt
    • 2 tbsp fresh lemon juice
    • 1 tsp chopped fresh tarragon or 1/4 tsp dried (optional)
    • 1/8 tsp ground nutmeg
    • 1/8 tsp freshsly ground black pepper
    • 1 tsp grated lemon peel for garnish


    Instructions


    1. In a medium saucepan, combine carrots, lemon peel strip, honey and salt. Add enough cold water just to cover carrots.

    2. Bring to a boil over medium-high heat; boil vigorously, stirring once or twice, until the liquid has nearly evaporated, about 15 minutes.

    3. Reduce heat to medium; stir carrot mixture until coated with glaze. Remove pan from heat.

    4. Add lemon juice, tarragon, nutmeg and pepper to pan; mix well. Place carot mixture in a serving bowl; garnish with grated lemon peel.
