Carrots, Honey-Glazed
Recipe Introduction
From "Healthy Meals in Minutes", 1995. This is a colorful complement to roast beef.
List of Ingredients
- 2 cups sliced carrots
- 1 lemon peel strip (2x1/2 inch)
- 1-1/2 tbsp honey
- 1/8 tsp salt
- 2 tbsp fresh lemon juice
- 1 tsp chopped fresh tarragon or 1/4 tsp dried (optional)
- 1/8 tsp ground nutmeg
- 1/8 tsp freshsly ground black pepper
- 1 tsp grated lemon peel for garnish
Instructions
- In a medium saucepan, combine carrots, lemon peel strip, honey and salt. Add enough cold water just to cover carrots.
- Bring to a boil over medium-high heat; boil vigorously, stirring once or twice, until the liquid has nearly evaporated, about 15 minutes.
- Reduce heat to medium; stir carrot mixture until coated with glaze. Remove pan from heat.
- Add lemon juice, tarragon, nutmeg and pepper to pan; mix well. Place carot mixture in a serving bowl; garnish with grated lemon peel.
