Mixed Country Vegetables

1 medium yellow onion, chopped (about 1 cup)
1 (16-ounce) package frozen corn kernels
1 (16-ounce) can lima beans, drained and rinsed
1 (12-ounce) package frozen chopped butternut squash, thawed
1 cup frozen green peas
1/8 teaspoon black pepper
1/8 teaspoon ground nutmeg
Recipe
1. Spray a medium nonstick skillet with vegetable cooking spray. Heat skillet over medium heat. Add onion. Cook, stirring frequently, until golden brown, about 10 minutes.
2. Add corn, lima beans and squash to skillet. Cook, stirring occasionally, until heated through, about 5 minutes. Add peas and pepper; cook, stirring, for 2 minutes longer.
3. Spoon vegetables into a medium serving bowl. Sprinkle with nutmeg.
