    Mushrooms Au Vin

    This is from my recipe file. I have no idea where it came from, but it's very good. (It sounds like something from Food and Wine or Gourmet Magazine.)


    List of Ingredients


    • 1/4 lb butter
    • 2 or 3 shallots, chopped
    • 2 or 3 cloves garlic, minced
    • 1-1/2 lb fresh button mushrooms
    • 2 cups Chablis
    • Salt
    • Lemon pepper
    • Chopped parsley


    Instructions


    1. In butter in 5 quart Dutch oven, saute shallots and garlic, stirring, until irridescent.
    2. Add mushrooms (which have been wiped with a paper towel) and wine. Simmer, uncovered, stirring occasionally for 2 hours.
    3. Season with salt and lemon pepper. Sprinkle with chopped parsley.


    Final Comments


    Makes 8 servings
