8 ounces lean bacon, diced
1 shallot, chopped
1 small head of iceberg lettuce, rinsed and dried
16 ounces frozen peas, thawed and drained
1 cup water
Salt and black pepper, to taste
Recipe
Fry the bacon and onion in a heavy skillet over medium-high heat until golden, about 8 to 10 minutes.
Discard any discolored leaves, then cut the lettuce in fine strips.
Place the peas in the bacon-onion skillet, followed by the lettuce shreds.
Add the water, reduce the heat to low, cover and cook for 20 minutes.
