2 tablespoons olive oil
1 cup onion, chopped
4 small zucchini, cut crosswise into 8 pieces, then quartered lengthwise
1 clove garlic, minced
1 yellow bell pepper, cut into 1/4-inch strips
1 red bell pepper, cut into 1/4-inch strips
2 mild green chilies, coarsely chopped
1 cup fresh plum or roma tomatoes, coarsely chopped
Salt and freshly ground Black Pepper to taste
1 cup Parmesan Cheese, grated
Recipe
Warm the oil in a large skillet over medium-high heat. Add the onion and sauté for about 2 minutes.
Add the zucchini and sauté until lightly browned, about 5 minutes.
Add the garlic and sauté for 1 minute more.
Add yellow and red bell peppers, chilies and tomatoes. Cook, stirring occasionally, for about 5 minutes. Season with salt and pepper.
