    • 4 eggs
    • 3-1/2 cups icing sugar
    • 3 cups flour
    • 1 Tbsp. rum
    • 1/2 tsp. lemon peel
    • anise to sprinkle on the sheet, if desired


    Instructions


    1. Beat eggs and sugar until creamy. Add rum, lemon peel, and flour. Dough should be sticky, but easy to handle. Roll small balls of dough 1 cm. thick, flour wooden shape with a knife and press dough into mold. Place on greased baking sheet and let cookies dry overnight. Bake at 250 for about 1/2 hour. Tops should remain white.
