    • 1 envelope gelatine
    • 1/2 cup water
    • 3/4 cup granulated sugar
    • 1/4 teaspoon salt
    • 1 teaspoon grated lemon rind
    • 1/4 cup lemon juice
    • 3/4 cup cold water
    • 2 egg whites, unbeaten
    • Custard Sauce:
    • 2 cups milk
    • 1/2 cup sugar
    • 3 eggs or 6 egg yolks
    • 1/2 tsp. vanilla


    Instructions


    1. Soften gelatine in cold water. Allow to stand about 5 minutes and then stir over low heat to dissolve. Combine with sugar, salt, lemon rind, lemon juice, and cold water. Chill until slightly thickened, then add 2 egg whites, unbeaten. Beat with rotary beater until mixture begins to hold its shape. Spoon into dessert dishes or large bowl. Chill until firm Serve with chilled Soft Custard Sauce.
      Custard Sauce:
      Scald together: milk and sugar. Beat eggs or egg yolks until light. Gradually stir in milk mixture. Return to saucepan or top of double boiler and cook over low heat, stirring constantly, until custard coats a metal spoon. Remove from heat and stir in vanilla. Chill. 4-6 servings. Sauce may be halved.
