    List of Ingredients


    • Soufflé Sauce:
    • 3 Tbsp. butter
    • 3 Tbsp. flour
    • 1 cup milk
    • 1/2 tsp. salt
    • Soufflé:
    • 1 cup soufflé sauce
    • 1/2 cup soft breadcrumbs
    • 1/2 cup grated cheddar cheese
    • 3 egg yolks
    • 3 egg whites
    • 1/4 tsp. paprika


    Instructions


    1. Sauce: Melt butter in a small saucepan. Add the flour and stir over heat for 3 minutes after mixture begins to bubble. Add salt and pepper. Stir in milk very gradually. Cook stirring constantly until the mixture is smooth and thick. Yield: 1 cup.
      Add bread crumbs, cheese, and paprika to soufflé sauce; allow the mixture to cool. Beat egg yolks until thick and add them to the sauce. Beat whites until stiff, then fold them in. Pour mixture into an ungreased baking dish; set the dish in a pan of water and bake in a 350 oven for 50-60 minutes – cooked when knife inserted in the centre comes out clean. Serve immediately.
