- Meat Filling:
- 1-1/2 lb. lean ground beef
- 2 Tbsp. vegetable oil
- 3 slices bread, crumbed
- 2/3 cup milk
- 1 egg
- 8 oz. pkg. mozzarella cheese, grated
- 2 Tbsp. chopped parsley
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 28 oz. spaghetti sauce
- 4 Tbsp. Parmesan cheese
- Cheese Filling:
- 24 oz. ricotta and cottage cheeses
- 8 oz. grated mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 Tbsp. chopped parsley
- 2 eggs
- dash nutmeg
- 28 oz. spaghetti sauce
- 4 Tbsp. Parmesan cheese
Instructions
Brown meat in oil in frying pan; remove excess fat. Combine bread and milk and allow to stand for 2 minutes. Add drained, cooked meat and remaining ingredients except spaghetti sauce and Parmesan cheese. Fill manicotti or cannelloni.
Cheese Filling: Mix together and fill manicotti.
Spread 1 1/2 cups spaghetti sauce in a 13 x 9 x 2 inch pan. Arrange filled manicotti in pan in a single layer. Pour over remaining sauce. Sprinkle with 4 Tbsp. Parmesan cheese. Bake covered in 350 oven for 45 minutes.
