- 6 slices bacon, chopped
- 1 cup chopped onion
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- dash pepper
- 1 pound beef liver
- 1-1/2 cups milk
- 1/4 cup fine dry breadcrumbs
- 1 tablespoon butter melted
Instructions
- Combine bacon and onion in skillet. Cook until bacon is crisp and onion is tender. Remove, reserving drippings in skillet. Combine flour, salt and pepper. Coat liver with flour mixture. Reserve remaining flour mixture. Brown liver in bacon drippings. Remove liver to 10x6x1 1/2 inch baking dish. Blend reserved flour mixture with drippings in skillet until smooth. Add milk. Cook and stir until thickened and bubbly. Pour sauce over liver. Sprinkle bacon and onion over all. Combine crumbs and melted butter; Sprinkle atop liver mixture. Bake, uncovered, and 350 degrees about 25 minutes. Makes 4 servings.
