    List of Ingredients


    • 1 1/2 cups cornmeal
    • 1 1/2 cups sour milk or buttermilk
    • 2 1/4 cups all purpose flour
    • 1 cup granulated sugar
    • 3/4 tsp. baking soda
    • 1/2 tsp. baking powder
    • 1/2 tsp. salt
    • 3 eggs, lightly beaten
    • 3/4 cup butter, melted
    • strawberry jam


    Instructions


    1. Combine cornmeal and sour milk and let stand for 10 minutes. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt; blend in cornmeal mixture, eggs, and melted butter, stirring just until moist. Spoon batter into muffin tins nearly to top; shape a small well in center of each and fill with about 1 tsp. jam. Bake at 400 for 20 to 25 minutes. Makes 16 muffins.
