    ORZO WITH SHRIMP, FETA & ARTICHOKE HEART

    List of Ingredients


    • 3/4 cup reduced sodium chicken broth
    • 1/4 cup dry white wine
    • 1 tsp finely shredded lemon peel
    • 8 oz orzo pasta
    • 1 cup frozen tiny peas
    • 6 oz jar quartered marinated artichoke hearts, drained and thinly sliced
    • 8 oz shelled cooked medium shrimp
    • 1/2 cup feta cheese, crumbled


    Instructions


    1. Bring about 4 quarts of water to a boil. Meanwhile, in a 2-quart pan, combine broth, wine and lemon peel. Cover; bring to a boil over high heat. Remove from heat; keep warm. Stir pasta into boiling water and cook until just tender to the bite (about 5 minutes); or cook according to package directions. About 1 minute before pasta is done, add peas; drain well. Mix pasta and peas with broth mixture, artichokes, shrimp and all but 2 tablespoons of the feta. Transfer to a serving bowl and sprinkle with remaining feta.
