    List of Ingredients


    • Pastry
    • 1 cup all-purpose flour
    • 1/4 cup butter
    • 2 tbsp sugar
    • 1 egg
    • 1 tsp white vinegar
    • Filling
    • 1 cup granulated sugar
    • 1/4 cup all-purpose flour
    • 1 tsp cinnamon
    • Grated rind and juice of 1 lemon
    • 5 cups quartered pitted fresh plums (about 2lb/1kg)


    Instructions


    1. Pastry; In food processor, combine flour, butter, sugar and vinegar; process with on-of turns until mixture resembles oatmeal. Firmly and evenly pat mixture into bottom and slightly up sides of 9-inch flan pan or pie plate.
      Filling: In bowl, combine sugar, flour cinnamon and lemon rind. Add lemon juice and plums; toss to mix. Spoon evenly over pastry. Place pan on baking; bake in 400F over for 50 to 60 minutes or until filling is bubbling and plums are fork-tender. (If top browns too quickly, cover loosely with foil.) Let stand for at least 1 hour before serving. Makes 6 servings.

    P.S. I used 3/4 cup sugar in filling, and baked 60 mins.
