GOLDEN PARMESAN POTATOES

- 6 cups peeled potato slices
- 3 tablespoons butter, melted and divided
- 1/2 cup Parmesan Cheese, grated
- Chopped fresh chives
Instructions
- Preheat oven to 425 degrees. Rinse potatoes, drain on a paper towel and pat dry. Brush butter on bottom and sides of a 9 inch pie plate. Toss potatoes with remaining 2 tablespoons butter and 1/4 cup of the cheese (combined). Arrange potato slices on the bottom and up the sides of the plate. Sprinkle with remaining cheese. Bake 1 hour or until potatoes are tender. Loosen in pan and invert onto serving plate. Sprinkle with chives. Cut into 8 wedges and serve.
