RAISIN LEMON LOAF

- 1/2 cup margarine
- 1/2 cup sugar
- 2 large eggs, beaten
- 1 1/4 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1/2 cup raisins
- 2 teaspoons grated lemon rind
- 1/3 cup honey
- 1/4 cup lemon juice
Instructions
- Cream margarine and sugar. Add eggs and beat until well blended. Blend together flour, baking powder and salt and add alternately with milk, beginning and ending with flour. Fold in raisins and lemon rind. Bake in a 9x5 loaf pan and allow to rest for 15 minutes to 1 hour or until browned and done. Heat and mix homey and lemon juice and spoon over hot loaf. Cool in pan on a rack for 20-30 minutes before turning out.
